Protein-Packed Bean Salad

With lots of balanced protein and fiber in this combination of beans, chickpeas, and peas you’ll have plenty of energy to get you through the day. Beans are the it thing to eat this year since the United Nations has declared 2016 the International Year of the Pulse!

Ingredients:

  • ½ cup chickpeas
  • ½ cup kidney beans
  • ½ cup peas
  • ½ cucumber
  • ½ apple
  • 3 oz artichoke hearts
  • ½ avocado
  • parsley to taste

Directions:

  1. Boil or steam fresh chickpeas, kidney beans, and peas for 15 minutes or until soft
  2. Chop cucumber, apple, and avocado into bite size pieces
  3. Add all to a large mixing bowl
  4. Dress with your favorite dressing or a simple oil and balsamic vinegar combo
