Dr. Rodier’s Huevos Rancheros

People love the recipes from Dr. Rodiers’ book! Want more great recipes? Check out Switching Off Chronic Disease.  Here’s another hearty gem packed with fresh vegetables that is part of his 8-week Cellular Detox Diet:

 Ingredients:
  • 10-12 pastured eggs
  • 1 medium onion, finely chopped
  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped and deseeded
  • 2 bunches green onions or one leek, finely chopped
  • 2 tomatoes, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 1 tsp of each of the following: oregano, cumin, coriander, oregano, and chili powder, salt, red pepper flakes
  • ½ tsp paprika
  • 4 cloves minced garlic
  • Avocado sliced or mashed (instead of using dairy for fat, like cheese, which is prohibited for the duration of the diet)
  • Lemon to taste
Directions:
  1. In a large skillet, saute the onion in olive oil until clear and slightly browned.
  2. Add the green onions/leeks until they get a little soft, and then add the tomatoes, garlic and spices and cook for just a few minutes.
  3. Add the eggs and cook until desired consistency is reached.
  4. Top with the avocado and serve right out of the skillet!
 Makes 4-6 servings
