Fresh Mulligatawny Soup
Fresh fruits and vegetables make this simple soup recipe a complete source of nutrition. Turmeric, ginger, and cayenne help detox the body. This recipe is also gluten-free, dairy-free, sugar-free, and vegetarian.

Serves 4-6
Ingredients:
- 1 medium sweet or red onion, peeled, diced
- 4 medium carrots, peeled and diced
- 1 cup cauliflower florets, chopped
- 2 large Granny Smith apples, peeled, cored and diced
- 1 medium sweet potato, peeled and diced
- 2 heaping cups thinly shredded cabbage
- 1 14-oz. can chick peas, drained
- 1 quart fresh spring water
- 2 cups vegetable juice
- 1 tbsp avocado oil (or olive oil)
- 4 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 tsps curry powder or paste
- 1 tsp turmeric
- 1/2 tsp cayenne pepper, more or less, to taste
- A small pinch of sea salt, to taste
- 1 cup coconut milk
- Juice from 1 medium lime, or to taste
Directions:
- Place all ingredients (except lime juice and coconut milk) in a slow cooker and cook until veggies are soft
- Add coconut milk and lime juice just before serving
- For a smooth soup, puree ingredients before cooking
