Fresh Mulligatawny Soup

Fresh fruits and vegetables make this simple soup recipe a complete source of nutrition.  Turmeric, ginger, and cayenne help detox the body.  This recipe is also gluten-free, dairy-free, sugar-free, and vegetarian.

Prep: 20 minutes

Serves 4-6


  • 1 medium sweet or red onion, peeled, diced
  • 4 medium carrots, peeled and diced
  • 1 cup cauliflower florets, chopped
  • 2 large Granny Smith apples, peeled, cored and diced
  • 1 medium sweet potato, peeled and diced
  • 2 heaping cups thinly shredded cabbage
  • 1 14-oz. can chick peas, drained
  • 1 quart fresh spring water
  • 2 cups vegetable juice
  • 1 tbsp avocado oil (or olive oil)
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tsps curry powder or paste
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper, more or less, to taste
  • A small pinch of sea salt, to taste
  • 1 cup coconut milk
  • Juice from 1 medium lime, or to taste


  1. Place all ingredients (except lime juice and coconut milk) in a slow cooker and cook until veggies are soft
  2. Add coconut milk and lime juice just before serving
  3. For a smooth soup, puree ingredients before cooking
