Roasted Beet and Goat Cheese Dip

For your next social gathering, think about using beets with some smooth goat cheese as a brilliantly healthy yet sophisticated and festive appetizer.

Ingredients:

  • 2 large beets, peeled and diced
  • 1 tablespoon olive oil
  • 4 ounces soft goat cheese
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon fresh or dried oregano leaves
  • ¼ cup plain full-fat Greek yogurt
  • ½ teaspoon ground cumin powder
  • dash turmeric
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 400ºF.
  2. Arrange the beet pieces on a greased oven tray and drizzle in olive oil.
  3. Bake for approximately 40 minutes, or until soft. Flip the beets over once during baking.
  4. Place all ingredients into a food processor and blend until smooth.
  5. Serve with raw vegetable sticks.
