Serves 4 to 6
Ingredients:
- 1 dash extra virgin olive oil
- 1 small sweet onion, finely diced
- Fresh grated ginger root, to taste
- 2 lbs. sweet potatoes or yams, peeled and diced
- Fresh water, enough to cover the potatoes
- Sea salt, to taste
- Cinnamon, to taste
- Turmeric, to taste
- Splash of coconut milk if desired
Directions:
- Turn your slow cooker to high
- Drizzle olive oil in bottom of cooker
- Stir in onion and ginger once the oil is warm
- Add diced sweet potatoes
- Cover with water
- Add sea salt
- Cover and cook until potatoes are soft
- Remove potatoes and blend into a puree
- Add coconut milk or water if desired to thin the mixture
- Add cinnamon and turmeric to taste
