Chickpea Burgers with Asparagus and Blueberries

Summer will soon bring grilling season into full swing.  With that in mind we were excited to discover this hearty vegetarian take on the quintessential American food – the burger. We kept it gluten-free by passing on buns and opting instead for a side of asparagus and blueberries.
Ingredients:
  • 1 carrot, medium-size
  • 1 garlic clove
  • 1 lb fresh chickpeas
  • 1 1⁄2 tsp cumin
  • 1 1⁄2 tsp coriander
  • salt & pepper to taste
  • 1 large egg
 Directions:
  1. Peel and grate the carrot and garlic
  2. Drain and rinse the chickpeas
  3. Place chickpeas, carrot, garlic, cumin, coriander, salt, pepper, and egg in a food processor and mix until you get a rugged paste, don’t let it get too smooth Grill, bake, or sauté burgers as desired
