Summer will soon bring grilling season into full swing. With that in mind we were excited to discover this hearty vegetarian take on the quintessential American food – the burger. We kept it gluten-free by passing on buns and opting instead for a side of asparagus and blueberries.
Ingredients:
- 1 carrot, medium-size
- 1 garlic clove
- 1 lb fresh chickpeas
- 1 1⁄2 tsp cumin
- 1 1⁄2 tsp coriander
- salt & pepper to taste
- 1 large egg
Directions:
- Peel and grate the carrot and garlic
- Drain and rinse the chickpeas
- Place chickpeas, carrot, garlic, cumin, coriander, salt, pepper, and egg in a food processor and mix until you get a rugged paste, don’t let it get too smooth Grill, bake, or sauté burgers as desired
