Veggie Quinoa Salad

This fresh easy salad takes only 25 minutes to make, tastes great, and supplies excellent nutrition. Quinoa provides protein, whole grains, and essential minerals like magnesium, manganese, zinc, and potassium.  Peas contribute potassium, vitamin C, protein, and fiber.


  • 1 cup quinoa
  • 1 cup peas
  • 1/4 cup eggplant
  • 1/4 cup zucchini
  • 1/4 cup onion
  • 1/4 cup red bell pepper
  • fresh basil
  • 1/3 cup balsamic vinaigrette dressing


  1. Boil quinoa for 15 minutes or until soft
  2. Add peas and boil another 5 minutes or until peas are soft
  3. Chop eggplant, zucchini, onion, and red bell pepper
  4. Drain water from quinoa and peas
  5. Mix all ingredients in large bowl
  6. Dress with basil and vinaigrette to taste
